Craft Spirits Festival DESTILLE BERLIN ist ganz der neuen Bewegung zu handwerklich hergestellten hochprozentigen Getränken aus kleinen Brennereien gewidmet. Immer mehr junge Brenner entdecken altes Handwerkswissen neu und bieten geschmackvolle Alternativen zum Standardsortiment der Supermärkte an: handgemachte Spirituosen in Kleinauflagen, regional verankert, nachhaltig produziert, aus natürlichen Zutaten. Die Craft-Spirits-Bewegung kommt ursprünglich aus den USA. In Europa findet man noch eine beachtliche Zahl traditioneller Spirituosen-Hersteller: Likörmanufakturen in siebter Generation, unabhängige Cognac-Häuser und archaisch anmutende Obst-Brennereien. Das Festival bringt diese Traditionsbetriebe mit einer kreativen und urbanen Spirituosen-Szene zusammen.

Mission: The Craft Spirits Festival DESTILLE BERLIN was founded in 2012. This trade fair brings together craft distillers with restaurateurs, retailers, F&B managers and barkeepers. At the same time DESTILLE BERLIN is open to a non-professional public and passionate connoisseurs. The Craft Spirits Awards DESTILLE BERLIN is a competition specialized on artisanal spirits. All products are evaluated by Germany’s top spirits professionals and are judged in a blind, consensual procedure, ensuring competitive integrity.

Welcome Siembra Spirits to Craft Spirits Berlin! Siembra Spirit is the project of David Suro, who was born in Guadalajara in the Mexican state of Jalisco, the heartland of tequila production, and has been running the “Tequilas” restaurant in Philadelphia, USA, since the 1980s. Together with the family distillery Cascahuin in El Arenal, he has been working for several years to rediscover original production methods and traditions and thus to present lost flavours and terroirs that are light years away from the average European understanding of the category. Here, small wood and copper pot stills are fired and only fully ripe agaves are cooked in earth ovens over wood and stone. Suro and Cascahuin lead Tequila back to its roots, which it shares with Mezcal. David Suro will take you on a tequila trip and explain the remarkable rebirth of tequila. @siembraspirits

Satasouji Shouten was established in Kagoshima in 1908. Their three principles are ""Kou"" (culture), ""U"" (clay jars for fermentation) and ""Han"" (relationships), that express the gratitude to the soil, time and people. Following a careful analysis of fermentation, temperature and distillation, they developed methods that bring out the best of the raw materials in their products. Get fascinated by Ming River at Craft Spirits Berlin on 7th of march at 5pm at Stage 1! The journey of Ming River Baijiu_DE begins in the heart of Sichuan, China in the lush port city where China's longest continuously operating distillery makes its legendary liquor. Over the past 700 years, traditional baijiu techniques here have passed from master to apprentice for over 20 generations. A balanced and complex spirit, Ming River is the original Sichuan baijiu. Each batch starts with locally harvested red sorghum grain and the purest waters from protected wells. It is fermented in earthen pits with naturally harvested yeast cultures native to Luzhou that impart the distinctive terroir of Sichuan style baijiu. After two months, the mash is unearthed and distilled in small batches using a traditional Chinese pot still. The spirits age for up to two years before the master blender balances them into Ming River's distinctive flavor. The result is an uncompromisingly bold spirit with notes of pineapple and anise with a lingering finish. Perfect neat alongside spicy cuisine or in a cocktail, this baijiu evokes Sichuan with each sip.

Among them are Arthur Nägele (international taster and tutor), Dr. Klaus Hagmann (food technologist, distiller and author), Stefanie Klöckner (sommelière and managing director of the Birkenhof distillery), the mezcal and rum expert Pascal Kählin as well as the brandy sommelière Silke Senft. A total of twenty proven spirits experts from Austria, Switzerland, Denmark, France, Hungary and Germany. If you are a distiller and want to take part in this competition, then now is your chance! Les Herbes Folles artisanal gin, distilled by La Société secrète, is brewed and fermented on site, built on a base of barley and malted wheat from Quebec. The must, two times distilled in a copper still with columns, will produce a sweet, mellow and pure alcohol. The resulting alcohol base is then redistilled to infuse it with the aromas of about ten wild herbs picked by hand in the Gaspé Peninsula. The gin is finally matured in oak barrels before being bottled, like a precious product made by hand, from picking to bottling. La Société secrète Distillery is located in an old Anglican church dating from 1875 by the sea, with a window on the Cap d'Espoir and a salty air, the distillery is unique in its kind, not only for its architecture but also thanks to the traditional process of producing its products. Each small batch is brewed, fermented and gently distilled on site with particular care for the ingredients used, but also for the techniques used, in order to combine tradition and avant-garde. Km12 is a classic gin inspired by the richness of the Quebec boreal forest. To discover this product is like taking a walk in the forest on a spring morning. Aromas of freshness take place in your mouth with subtle slightly fruity taste notes, followed by a conifer explosion on your palate. The masterminds behind this gin, are the people of Distillerie du Fjord The passion of distilling was passed on from generation to generation while this project originated with the two brothers, Benoit and Jean-Philippe alongside their father, Serge Bouchard. “When our father took out our grand-father’s old still, we suspected it was in our blood.” Fjord Distillery is getting their inspiration from their surrounding environment, the immensity of the Saguenay Fjord, the richness of the boreal forest and the magnificent pureness of the MOnts-Valins natural water source. With their own spirit base they distill in a customized pot still using a specialized botanical basket. One of the Gins you will find is from the Distillerie du St. Laurent, Quebecs micro distillation pioneers. Their St. Laurent Gin is a craft spirit distilled in small batches in Rimouski, Québec, using only natural ingredients and no artificial colours. Made in a 380-litre still, St. Laurent Gin is vapour-infused with exotic botanicals using an uncommon double gin-basket setup, then slowly macerated with a locally hand-harvested seaweed, Laminaria Longicruris. The complex aromas of St. Laurent Gin derive from an improbable mix of botanicals from around the world and seaweed from the St. Lawrence River.

In 1955, not far from Bremen, a group of grammar school boys come across a bizarrely shaped piece of wood. Knowing nothing of its origins, they decide to name it Pijökel: our little thing.Once a year they meet to pay homage to their mystical wooden icon, the Pijökel Brotherhood is born. Feeling that this ritual deserved a fitting drink, the Brother and pharmacist Kuno Grote decided to craft a unique herbal elixir - and called it Pijökel 55.
