Happy Cinco de Mayo from LAWineFest

Here are five traditional dishes and the wines to match from the Wine Enthusiast...

Mole Poblano: The dark-berry fruit, gentle spice and smoky finish of a Zinfandel or Primitivo echoes the prune-like dried chilies and gently charred flavors of this complex, chocolate-chili sauce.

Shrimp Ceviche: A dry (trocken) Mosel Riesling has zippy acidity to stand up to the citrus, and its relatively low alcohol level doesn’t accentuate the spicy heat. Serve it close to ice-cold to further refresh the palate.

Enchiladas Rojas: Not all Mexican chili sauces bring power and heat. This mellow, earthy red sauce will nuzzle up nicely with a silky, fruit-forward California Pinot Noir.

Costillas en Salsa Verde: This classic pork-rib dish calls for a crisp New Zealand Sauvignon Blanc, since both the wine and the tomatillo salsa often share a distinct gooseberry note.

Tacos Campechanos: The multilayered flavors of these steak-and-chorizo tacos—earthy and meaty, garnished with onion, cilantro, salsa and lime—call for sheer refreshment, not competition. Best bet: Pop a chilled bottle of your favorite sparkling rosé.

We are reaching out to share with you that the LAWineFest team has made the difficult decision to postpone the 15th annual LAWineFest, currently scheduled for June 6 and 7. It is with a heavy heart that we do so, but with concern for the health and safety of all our friends - wineries, exhibitors, breweries, sponsors, Fest-goers, event volunteers, and staff -- we feel we need to take this step at this time.

With the support of the team at The Pike Outlets, and our sponsors, we have set a tentative new date for August 8 and 9. We look forward to sharing a glass with all of you in August - we'll all need one by then! All tickets sold will be redeemable on the new dates!

We will continue to closely monitor this unprecedented situation, will follow California Department of Public Health directives and will keep everyone updated from our end.

Please follow the CDC and State of California guidelines - and stay safe!

10 popular wines and the cheeses to pair with them..

1. Cabernet sauvignon, merlot and Bordeaux blends - cheddar, gouda and other hard cheeses.

2. Pinot noir - brie and camembert.

3. Rhône and other southern French reds - a good all-rounder with a French cheeseboard.

4. Rioja - particularly good with sheep cheeses like Manchego.

5. Chianti - parmigiano reggiano and pecorino.

6. Port - blue cheeses like stilton.

7. Sauvignon blanc - goat cheese and feta, cheeses with garlic and herbs.

8. Chardonnay - buttery cheddar.

9. Pinot Grigio - mozzarella and other mild Italian cheeses (good with an antipasti platter).

Traditional Irish cuisine is a great match for Guinness but it’s also a great match for wines, beers and ciders too! You may think “traditional Irish” and “cuisine” don’t belong in the same sentence? Well, Irish food has undergone a renaissance of sorts with an emphasis on fresh ingredients direct from the farm.

Here are a number of modern Irish meals that pair wonderfully with some your favorite beverages...

1. Corned Beef & Cabbage

Pairing wine with Corned Beef is a little trickier than it first appears. Corned beef is made from brisket so the meat doesn’t have a lot of marbling. Given the bright red color, the first thought might be to go with a big Cabernet Sauvignon or Syrah. However, it is recommended to pair with a Merlot or Zinfandel as well.

Even though there's actually not much corned beef eaten in Ireland, this dish paired with a green-tinted lager is the perfect combination for all things Irish!

2. Fish & Chips

Unlike other traditional Irish dishes, fish and chips have only been around for about 150 years but they have quickly become a staple. Riesling or Pinot Grigio are a perfect compliment. If you want something a little more adventurous with a hint of spice, try an Albarino.

You can also pair Dry Perry or Pear Cider with fish as it tastes more like a white wine. Sparkling perry is good too - on the same basis as Champagne. For beer its best if bitter or a pale ale.

3. Irish Stew

This dish is often cooked with Guinness, which provides a rich smokiness to it. That being said, there are some great wines to accompany a traditional Irish Stew.

The normal rule of pairing wine with a meal is drink what goes into the food. For example, if you cooked with a Burgundy, drink a Burgundy. Other options include Merlot or Cabernet Franc.

Here are some basic rules for pairing wine with food...

1. Red wines go better with red meat. If you only had to remember two standards, this one would be one of them. Red wines are typically bolder, so they go better with bolder meats like a fatty steak.

2. White wines go better with white meats. White meats like poultry and seafood are lighter in taste so a lighter white wine will pair better.

3. If pairing with a heavy sauce dish, pair the wine with the sauce instead of the meat.

4. Bolder, and more bitter wines are balanced with fats. Bold red wines are generally more bitter.

5. Don’t overpower. Don’t choose a wine that will overwhelm the dish and don’t pick a dish that will go and beat the wine. They can complement and contrast, but don’t overpower. An example of this would be pairing a bold red wine with a light dish like baked chicken.

6. The wine you choose should always be more acidic than the food. If the food contains more acid, it will quickly overpower the wine and throw the balance off.
