Farm Purchase Marks Major Expansion for Sonoma’s SingleThread

A 5-acre plot along California’s Russian River has been the backbone and heart of SingleThread Farms inn and restaurant in Healdsburg since 2014. Now husband-and-wife owners Kyle and Katina Connaughton are expanding their passion-driven project by relocating farming operations from Alexander Valley to a much larger property in Dry Creek Valley.

“We will have the opportunity to significantly increase our footprint in sustainability, strengthen food security and bring more biodiversity to a predominantly grapegrowing region,” Katina, who manages the farm, told Wine Spectator via email. A partnership with Price Family Vineyards owner and SingleThread investor Bill Price, the purchase of the 24-acre farm site was announced earlier this month. Katina and her team have already gotten to work.

So how exactly do you taste champagne ??? 🧐🧐

Palmes d’Or is a “prestige” Champagne by the region’s largest cooperative, Nicolas Feuillatte. The wine sits on tirage (aging on the lees) for at least 8 years which suggests it will have desirable flavors of toasted brioche, cake, or nuts. Flavors like these really only come out with extended aging.

This is what is so exciting about buying aged vintage Champagne.

How to Taste Champagne
There are essentially 3 major parts:

Identify the aromas and think about what they mean.
Take note of the bubble finesse, acidity, and other basic wine traits.
Conclude about how the components of the taste create balance or imbalance with the aromas.

Feeling “Off” After Drinking Wine
In excess, any alcoholic beverage brings feelings of fatigue, headaches, nausea, and abdominal pain. However, some drinkers complain about the onset of these symptoms after just a glass or two of wine.

What is causing this?

Is it sulfites? Added sugar? Alcohol sensitivity? Or some other wine additive?

Awesome Wine & Binge Worthy TV Pairings For Lazy

Game of Thrones
Wine: Tempranillo

Why it works: We’ve talked about the world of Game of Thrones and what their wines were probably like, but the one that gets mentioned the most by Tyrion and all of his wine swilling chums tends to be Dornish wine. Sandy and arid, it’s our guess that Dorne produces some amazing Tempranillo.

Grey’s Anatomy
Wine: Provence Rosé

Why it works: Forgive me if this sounds a touch stereotypical, but during the 15 seasons since Grey’s Anatomy first aired, I’m willing to believe that roughly 14 billion bottles of rosé have been consumed by the show’s fans alone (this is all backed up by incredibly precise math, I assure you). This show basically screams “yes way, rosé.”

A Provence Rosé, in particular, is perfect for this show, with its steely minerality pairing perfectly with all that hospital drama. Its delicate strawberry and melon notes are for the warmer, feel-good moments.

Black Mirror
Wine: Something cloudy and natural

Why it works: Okay. To be clear, Wine Folly in no way endorses watching more than one episode of Black Mirror at a time. That’s one TV binge that lands you on “sad sack” street. But if you must, then you can’t go wrong with a natural, organic, or a wine from an otherwise sustainable winery or vineyard.

With all the messages of technology bringing about the end of civilization as we know it, you’ll get through each episode a little easier knowing that at least your wine wasn’t made in a way that could bring about the apocalypse.

Hannibal
Wine: Amarone della Valpolicella

Why it works: Did we miss an opportunity to suggest a Chianti here? Well, look at it this way: the original line from our favorite cannibalistic doctor was actually “I ate his liver with some fava beans and a big Amarone,” and that’s a way better pairing.

The erudite, snobbish tone of Hannibal will go down beautifully with Amarone della Valpolicella: one of the more expensive and sought after wines in the world. Plus, its deep notes of cherry liqueur, plum sauce, and black fig are quite visceral, and bring to mind certain… “meatier” elements of the show itself.

What Grapes Make the Best Wine Blends???

Each grape variety that’s added to a wine blend contributes a special attribute, which combines to create a perfectly well-rounded, rich and smooth tasting wine. Wines from Bordeaux and Champagne are world-renowned for their exceptional wine blends.

So, what grapes make the perfect blends?

A Historical Tradition
History plays a leading role in determining the world’s best wine blends. Traditionally, when different grape varieties grew side-by-side in the vineyard, winemakers would pick them at the same time, and pool them together for fermentation. This style is now called a field blend (in fact, this is still how Port is made). However, over time, winemakers began to realize that fermenting varieties separately made for a more consistent recipe. Therefore, they began fermenting each grape variety in separate barrels and combined the different wines together afterward in a vat called a “cuvée.” These cuvées were then sold and labeled from the regions where the grapes were grown. This is why in old wine making countries, such as Italy and France, you’ll see wines named after a town (e.g. Rosso di Montalcino “red of Montalcino”).

When it comes to wine and salad, confusion can sometimes rear its ugly head. There are so many factors one must consider. First, there are the veggies, and then you have cheese, and oh dear… bacon bits.

Wine and Salad Dressing
Buttermilk Ranch: try it with a buttery, oak-aged California Chardonnay
Classic Italian Dressing: Match with a crisp, refreshing Italian Verdicchio
Caesar: This matches well with fish-friendly French Pouilly Fumé (a cool-climate Sauvignon Blanc!)

Parsley: herbaceous whites with acidity: Sauvignon Blanc, Grüner Veltliner

Does Sunlight Effect Wine?
Did you know that direct sunlight exposure can change a wonderful bottle of wine to nasty swill? This unfortunate phenomenon is light strike.

Light strike occurs when the sun’s ultraviolet (UV) rays flood the bottle. This excites the wine’s naturally occurring riboflavin (Vitamin B2) and pantothenic acid (Vitamin B5).

These energized molecules then react with naturally present amino acids. This yields sulfur containing compounds that we can smell at very low levels, and they stink!

3 hours of sun exposure is all it takes for wine damage to occur in clear bottles. Wine in green bottles takes only 18 hours. Be mindful of where a store has placed its wine before purchasing.

Sommeliers out there, what’s your hot take? 🤩🍷

These are some of the most popular wines in the world according to our friends at wine folly 👇🏽👇🏽👇🏽

Cabernet Sauvignon
Red. This French-origin grape was first made famous by the wines of Bordeaux. Today, Cabernet Sauvignon grows all over the world, including several unexpected places such as Lebanon and China.

Merlot
Red. The “other” Bordeaux variety produces exceptional, age-worthy wines even if it is often overshadowed by Cabernet Sauvignon. Merlot is known for its boisterous cherry fruit flavors and refined tannin texture.

Airén
White. One of the least-known of the prolific wine grapes of the world, Airén grows mostly in the Castilla-La Mancha region of Spain where vines are spread far apart to survive the arid high plains.

Tempranillo
Red. This is Spain’s most planted and highly-prized red variety. Wines range in style from rosé to red, but Tempranillo is perhaps most known by its two champion regions of Rioja and Ribera del Duero.

Chardonnay
White. The world’s favorite white wine originated in Burgundy, France, where wines were traditionally aged in oak barriques (barrels). The oak-aging makes Chardonnay one of the boldest styles of white wine in the world.

Syrah
Red. Syrah originated in the Northern Rhône of France and went on to become the most popular wine in Australia (where it’s called Shiraz).

Garnacha
Red. This is a lighter-colored red with high-toned aromas of red and black berries. For what the grape lacks in tannin it makes up for with zingy acidity and elevated alcohol. This grape blends exceptionally well with Syrah and Monastrell.

Sauvignon Blanc
White. Sauvignon means “savage” or “wild,” which describes the state of the wild white grape vines planted around Bordeaux and the Loire Valley of France. Sauvignon Blanc is being recognized as increasingly special, as it was recently identified to be the parent grape of Cabernet Sauvignon.
